I have no title for this post yet, brain is not fully engaged at this moment. I have been awake since 3 and still have a meeting to go to yet tonight.

1 cup fresh beets (100)

Walking: 15 minutes (I forgot my step counter at home this morning)
Sitting here thinking I so do not want to go to this meeting, but at least I came up with the blog title.....

ReplyDeleteHow do you like your beets? Cold, hot? Pickled? Pooldad loves them, and I know they are so good for us, but I just can't get around them. :) - Their juice makes excellent dye tho'.

Finally home from my meeting, we got a lot done so that was a bonus. We like our beets cooked, sliced with a bit of butter, salt and pepper. Sometimes I put just a touch of lemon juice on as well. Pickled beets are my absolute favorite pickle. They are an acquired taste but so yummy.

You definitely hang in here. You fall off plan, but get right back on. Most people wouldn't do that. I notice you don't eat much meat. That is a big help.
